Pecan Pie Overnight Oats

A lighter, HEALTHIER take during the holidays! You can prep everything ahead of time. Just serve into a bowl and top with pecans!

I am doing my best to take it easy during breakfast time.

Because at night, we still have some major holiday leftovers lingering around.

So in an attempt to stay in “shape” during this winter, I’m having pecan pie in a bowl.

The oats? It’s overnight oats!

So simply soak your oats overnight.

Then top with your Fisher Nuts pecan pie mixture.

It’s preservative free and non-GMO Project Verified.

Now you can have Thanksgiving and Christmas anytime for breakfast.

Just without the need for stretchy pants.

Pecan Pie Overnight Oats

Yield: 6 servings

Prep Time: 5 hours 10 minutes

Cook Time: 5 minutes

Total Time: 5 hours 15 minutes

  • 1 cup pecans, chopped
  • 2 tablespoons maple syrup
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • Pinch of nutmeg

For the overnight oats

  • 2 cups old fashioned oats
  • 2 cups milk*
  • 1 teaspoon vanilla extract


  1. In a medium skillet, combine pecans, maple syrup, brown sugar, cinnamon, vanilla and nutmeg until toasted and well combined, about 3-4 minutes; set aside.
  2. Combine oats, milk and vanilla in a large bowl. Refrigerate, covered, for at least 5 hours or overnight.
  3. Serve oats, topped with pecan mixture.

*Dairy milk, almond, cashew or coconut milk can be used.

2/3 cups oats for 1 cup liquid is a ratio that makes really firm oatmeal. Next time I make it I wont put more than 1/2 cup oats, maybe a little less.

This sounds nice, but dont you cook oats and serve hot?

Overnight oats is a little bit different than oatmeal – it’s meant to be served cold!

Can I make thus with steel oats… only have that in the house right now

Nothing, just a buzzword

Some folks would prefer to not use genetically modified food. Not so much a buzzword as it is simply sharing information that some would want to have. Same as letting people know that something was raised without antibiotics, chemicals, or if it has animal by products, soy, gluten, etc…

Yes, you can make it ahead of time!

Q, what is the difference between the pecan here listed as ingredients vs the raw pecan in Cinnamon sugar candied nuts? Am I supposed to buy the raw pecan for both recipes?

Yes, raw pecans are best to use!

I made a giant batch of the pecan mixture on Sunday night, and have been making individual portions of overnight oats and eating these every morning for breakfast this week. The pecan mixture is SO GOOD. A+ oatmeal mix-in!

Can I use quick oats? I don’t want to buy another container of oats.

I have been wanting to try overnight oats for some time. I really enjoys the topping but found the oats very bland. I also only got three servings out of this. Otherwise, I feel like it would not have been enough to sustain me on it’s own. So, the sugar content probably did not make it worthy of my diet. I love all your recipes! I just think if you expect this to be like Quaker instant oatmeal, it’s definitely not that.

Meagan, the oats are meant to be eaten with the topping, not on its own! And no, there are no claims here for this to be like Quaker instant oatmeal. It’s homemade! 🙂

I’m about to try my first pumpkin recipe of the season kind excited about it! looks great! I am def a morning person, although the weather in Portland at the moment has been making me want to stay in bed all day! so rainy and gloomy!

I love the idea of prepping the night before, but I cannot get used to cold oatmeal.
Could this be heated in the morning?

Yes, you can warm the oats in the microwave for a minute or two if you’d like (before topping with the pecan mixture).
