Patty Melt Grilled Cheese

A classic American diner sandwich, with melted cheesy goodness, a juicy patty and caramelized onions – made in a waffle maker.

You know, I always struggle with his holiday.

It’s that need to find that perfect costume…

It’s not an easy task, especially when you’re dressing your baby corgi.

But I think we nailed it this year.

So please welcome Butters, Damn Delicious’ newest sushi chef.

Yes, he clearly loves it.

And now I need sushi.

Let’s inhale this grilled cheese first.

Because clearly we’re on the halloween diet.

With a big, juicy patty. And plenty of caramelized onions. With extra cheese.

Patty Melt Grilled Cheese

Yield: 8 servings

Prep Time: 15 minutes

Cook Time: 35 minutes

Total Time: 50 minutes

A classic American diner sandwich, with melted cheesy goodness, a juicy patty and caramelized onions – made in a waffle maker.

Ingredients:

  • 4 tablespoons unsalted butter, divided
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1/4 teaspoon dried thyme
  • 1 1/2 pounds ground beef
  • Kosher salt and freshly ground black pepper, to taste
  • 8 slices rye bread
  • 4 tablespoons mayonnaise
  • 4 ounces sharp cheddar, thinly sliced
  • 4 ounces Swiss cheese, thinly sliced

Directions:

  1. Preheat a waffle iron to medium-high heat. Lightly oil the top and bottom of the waffle iron or coat with nonstick spray.
  2. Melt 2 tablespoons butter in a large skillet over medium high heat. Add onions, garlic and thyme; season with salt and pepper, to taste. Cook, stirring occasionally, until the onions are very soft and caramelized, about 25 minutes; set aside.
  3. Divide ground beef into 4 balls; press each lightly to form 1/4-inch-thick patties; season with salt and pepper, to taste.
  4. Melt remaining 2 tablespoons butter in the skillet. Add patties to the skillet and cook until browned and cooked through to medium rare, about 3-4 minutes per side, flipping only once.
  5. With a butter knife, spread mayonnaise on one side of each slice of bread. Working in batches, place slices, mayonnaise side up, into the waffle iron. Top with patties, onions, cheese and remaining bread slices, mayonnaise side down. Close gently and cook until golden brown and crisp, about 3-4 minutes.
  6. Serve immediately.

Hi — This sounds yummy. Just a question, the directions say garlic and thyme but there is no garlic or thyme listed in the ingredients section. How much should you use? Thanks!

2 cloves garlic, minced
1/4 teaspoon dried thyme

Based on recent blog posts, looks like I need to invest in a waffle maker. This one looks good!

Hi – to clarify, are the mayo sides of the bread touching the waffle iron?

No, they are not.

Looks great. Love the shot of Butters

This patty melt grilled cheese is one of my favorite comfort food!
Btw, Butters is rocking it in that costume!
Happy Halloween 🙂
Cheers,
Amy

He looks adorable! My Shih-Tzu, Patches is black and white and weight 6 pounds, so he’s small, and we’re dressing him up as a skunk. They make some seriously cute dog costumes. Have a Happy Halloween!
Patty Melts are one of my favorite dishes, so I am totally going to try these, they look delicious!

The garlic and thyme was deleted from the recipe. How much of each to use please?

2 cloves garlic, minced
1/4 teaspoon dried thyme

Ah yeah, this is how it’s done! I must taste asap.

Looks delish! What kind of waffle maker do you recommend?
