Kale Pesto Avocado Grilled Cheese

Hearty, cheesy, nutritious and filled with plenty of greens! Can be served for lunch or dinner for the entire family!

Greetings from Cape Town, South Africa!

It’s been a whirlwind of a week. Jumping from Denmark to Sweden to Germany…

And 20-something hours later…

It was quite a journey.

But it’s absolutely beautiful out here.

I went from 30 degrees to 80 degrees F.

So I can definitely get onboard with the summer months here.

And with a view of Table Mountain, I may never leave again.

Except maybe for this grilled cheese.

This green-loaded cheesilicious wafflized sammie.

I made up a few words there.

But you catch my drift.

Pesto. Kale. Avocado.

Kale Pesto Avocado Grilled Cheese

Yield: 4 servings

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Hearty, cheesy, nutritious and filled with plenty of greens! Can be served for lunch or dinner for the entire family!

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 bunch kale, stems removed and leaves chopped
  • 8 slices whole wheat bread
  • 2 avocados, halved, seeded, peeled and sliced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup pesto, homemade or store-bought

  1. Heat olive oil in a large skillet. Add garlic to the skillet, and cook, stirring frequently, until fragrant, about 1 minute. Stir in kale until bright green and wilted, about 3-4 minutes; set aside.
  2. Preheat a waffle iron to medium-high heat. Lightly oil the top and bottom of the waffle iron or coat with nonstick spray.
  3. Working in batches, place bread slices into the waffle iron. Top with kale, avocado, mozzarella, pesto and remaining bread slices.
  4. Close gently and cook until golden brown and crisp, about 3-4 minutes.
  5. Serve immediately.

Yum! This looks amazing! Beautiful photos

This sandwich looks amazing! I need it in my life!

Hi! What an amazing sounding recipe. I’d like to make this w/o going to the store so I have a few questions about substitutions for the kale pesto.
I don’t have cilantro or mint leaves. Can I omit or substitute w/ something else? I have spinach and parsley…
Also, no pistachios, but I do have pecans and walnuts…Will either work?

Unfortunately, without further recipe testing, I cannot answer with certainty. As always, please use your best judgment regarding substitutions and modifications.

I like this theme of using waffle irons for sandwiches. I was thinking of purchasing one since I don’t have one. Any recommendations?

Yes, I love my Breville!

LOVE making panini in the waffle iron and this looks like an amazing take on the classic grilled cheese!

I love it so much! My first time using a waffle maker! I’m excited to try more.

it’s not possible that this is 290.3 carbs per serving…something has gone wrong with you calculations…

The numbers have been updated – thanks for pointing that out! 🙂

What a wonderful color palette and wonderful taste combination for your palate. And lets do mention the absolute happy alarm that goes off the first bite you partake of this ingenious sandwich. 1

Now THIS is how to get my kids (who am I kidding- myself!) to eat kale. 🙂 These look SO delish- and love that you’ve donte them in the waffle iron!
