Hot Cheesy Corn Dip

A super easy and amazingly creamy corn dip that comes together with just 10 min prep. And it’s even made “skinny” with Greek yogurt!

I’m not much of a football fan. Actually, I’m not a fan at all. When I’m watching a game, I honestly have no idea what’s happening. Everyone seems to be running around and I don’t even know where the ball is half the time! The only thing I do know is when a touchdown happens. That’s about it.

But even though football is practically a foreign language to me, there’s something that I really love about it when it’s football season – it’s all the fun party food that comes with it, like this super cheesy corn dip.

With just a few ingredients and 10 minutes of prep time, this come together so easily before you pop it in to the oven until it’s bubbling over. Once it’s out of the oven, just dip right into that epic cheesy, creamy goodness. You can even make it in advance and pop it in the oven 30 minutes before serving – it’s that easy!

I LOVE this dip! I have a couple variations on my site for it. Dude I cannot be trusted around it. I could eat the whole thing in a sitting 🙂

It’s so dangerous to have around! Jason and I stuffed our faces with this instead of dinner!

OMG I would eat that all day long!! I would sneak some into the movie theater!! I think I’ll do just that!

It would be a goldmine to sneak this into a movie theater!

I like the movie theater idea!

Pass the spoon! This looks awesome and cheesy corn has got to be on of the best dip creations out there!

I can’t wait to make this dip! Out of this world. Football sort of bores me, it really IS all about the food!

The finger foods are really the best part about football!

True story, I only watch football when food is present. 🙂 Definitely making this dip to keep me company for next weekend’s game!

Swooooon!! This is my kind of dipping. Looks amazing.

There is absolutely nothing bad about this dip. I wish I had some right now! Perfect football food.

Dude. How do you come up with this stuff. Holy mother, this is amazing! I don’t know if I’d share this… I’ll take the whole bowl, please!!

I didn’t really share with Jason – we each had our own individual ramekins!

I’m not a football fan either, but I like this dip. Thank you.

This dip definitely trumps football!

This looks SOOO good! I will try immediately!

Let me know how it turns out!

Yum! Nothing like hot cheese to make a person happy!

Perfect dip for football season!

Great idea of individual serving. That way we don’t fight who dip more. 😀 Very dangerous once you start dipping… no one will be able to stop! Love this dip. You make me so hungry at this time…

Oh this looks just amazing! And so easy – perfect for cozy fall football watching!

That’s pretty much all I understand about football too. On the other hand, I understand the food much better and cheesy dips like these… I would probably devour this at once!

Oh dear! I’ve been so sick and away from my computer- but HELLO! Your new site is freaking gorgeous. Congrats my dear!! This corn dip is calling my name right now by the way.

Oh my god… this looks insanely good. I can’t believe how easy it is too! Very dangerous recipe – I’d make this and eat it all to myself haha

I want some of this and I want it bad!

Can I use frozen corn instead of canned (longer cooking?)

Yes, frozen corn should work just fine.

My sis in law told me about ur website. Trust me , though I have not yet tried any of ur recipes, I’m simply in love with ur recipe.
They look so easy to make with common ingredients.
Can’t wait to try.

How about adding about six slices of chopped bacon? I think that would take it over the top. Thanks!

Oh my this looks delicious! Thank you so much for your creative and innovative recipes!

Always love a good dip recipe. Annnd I love me some cheesy ones. Can’t wait to try this! PINNED! 🙂

Oh my goodness!! This looks soo yummy! I must figure out how to make a vegan version of this recipe!

Never mind, I can’t understand American football either. I can manage Australia’s four different codes, but not American. But I DO understand that this dip looks absolutely delicious. I plan to make it for when I watch the next game of Australian Rules. Thanks for the recipe (and the admission that I’m not the only person who cannot understand your football).

Can you use lo fat sour cream or regular lo fat yogurt instead of Greek yogurt?

Yes, sour cream can be used instead.

Made this for Cinco de Mayo. Family loved it. Very easy to make.

Okay so these new pictures are gorgeous and I’m SURE the new version of this recipe is delicious but I am in a little shock that your original (and quite different, if memory serves me correctly) Hot Cheesy Corn Dip recipe is gone. It was so SO SO good. My friends, neighbors, family, etc etc etc and I LOVED that dip and I just came back to grab the recipe to make it this weekend and am panicking a bit now, having promised your original recipe to friends for their party this weekend. I feel like the old one had Monterrey Jack cheese, canned corn, mayo, chiles, and maybe one or two other ingredients? Does that original recipe exist anywhere now? Or can you email it to me? I’m BEGGING. This new one looks quite a bit more heart-healthy but man, the old one was SO GOOD.

Kara, this new recipe is actually a revamped version of the old one – I promise you – it’s better! 🙂

Come join me in my culinary adventures where we’ll be using simple, fresh ingredients and transforming them into sophisticated and elegant meals for the everyday home cook.
