Skip Chipotle and try these burrito bowls right at home. It’s easier, healthier and 10000x tastier!

I finally made a burrito bowl at home. Well, I guess it’s more of a burrito plate. But still. Burrito bowl, burrito plate – I’m in love.

With fresh veggies and just 10 min prep with a creamy chipotle drizzle, what’s not to love?

Plus, this is completely customizable to add in your favorite proteins. Or if you’re like me, you can keep it vegetarian. There’s plenty of goodies to go around here!

And if you really want to go that extra step and make these even healthier, you can use quinoa in place of the rice.

You’ll get that extra kick of protein, and be full for hours on end! So who still wants Chipotle for dinner tonight?

Easy Burrito Bowls

Yield: 6 servings

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

  • 1 cup uncooked rice
  • 1 cup salsa, homemade or store-bought
  • 3 cups chopped Romaine lettuce
  • 1 (15.25-ounce) can whole kernel corn, drained
  • 1 (15-ounce) black beans, drained and rinsed
  • 2 Roma tomatoes, diced
  • 1 avocado, halved, seeded, peeled and diced
  • 2 tablespoons chopped fresh cilantro leaves

For the chipotle cream sauce

  • 1 cup sour cream
  • 1 tablespoon chipotle paste*
  • 1 clove garlic, pressed
  • Juice of 1 lime
  • 1/4 teaspoon salt, or more, to taste


  1. To make the chipotle cream sauce, whisk together sour cream, chipotle paste, garlic, lime juice and salt; set aside.
  2. In a large saucepan of 1 1/2 cups water, cook rice according to package instructions; let cool and stir in salsa; set aside.
  3. To assemble the bowls, divide rice mixture into serving bowls; top with lettuce, corn, black beans, tomatoes, avocado and cilantro.
  4. Serve immediately, drizzled with chipotle cream sauce.

*2 tablespoons chipotle peppers, in adobo sauce, can be substituted for chipotle paste.

Awwww – thanks! Butters has been glued to me during my shoots, bouncing up and down like a pogo stick. But this time, he actually caught himself on the table!

We do not have chipotle here in Australia, so do you have any ideas about what can be used instead?

I recommend using a different dressing that would pair well with the flavors present in this dish such as a lime vinaigrette.

What kind of salsa did you use ?

1/4 tsp. Smoked paprika and 3/4 tsp. chili powder, and a chopped roasted jalapeno, seeded.

If you get liquid smoke in Oz put a couple of dashes in it. I don’t get canned chipotles here in Colombia either.

I made these this evening and ended up just squeezing half a lime into the sour cream and adding some minced cilantro and salt, delicious! Also, I live alone, and even though I made the full recipe, I portioned it all out into separate containers for lunches and quick dinners for the week! LOVE your website!

This looks so light and fresh. A perfect lunch! Where do you find chipotle paste? I use canned chipotle all the time but never heard of the paste.

I like to use Olo’s chipotle paste: http://www.olofoods.com/index.html. They come in a cute toothpaste like packaging and last for weeks!

MMm fantastic! USually when I have burritos for dinner, I have one and then I made a little burrito salad afterwards, compromise second helping 😛 And it’s got all the best bits, yum!

I like refried beans and ground beef with taco seasoning in my burritos so I would add those and take out the black beans and the rice…can’t eat rice with my lapband. Sounds good though!

I just went to Chipotle the other night because I was craving an easy dinner. These bowls are so gorgeous!

I am planning on making a Mexican style salad (w/ most of the same ingredients) one day this week. However, I wasn’t sure of what dressing I was going to use. Something with lime… I like the dressing you posted. I think I will make it. 🙂

Looks great but Butters steals the show…So cute. Any idea what to substitute for the sour cream to make it vegan. Would love to serve this when we have another couple over as one is vegetarian-ish (enjoys meat as a treat but not every day) but the other is vegan. As I am trying to look into other “alternative styles” not sure what I can or if I can swap out/exchange the sour cream……I will be enjoying this without the vegan at some point….teehee

For a vegan option, I recommend using a fresh vinaigrette, such as a lime or lemon vinaigrette.

This looks delicious. Question… What is “pressed garlic”?

It’s another way to cut garlic. This is easily done with a garlic press. That way you don’t end up with huge chunks of raw garlic in your dish!

I love garlic in cooked food, but for this I will use a microplane or fine grater to basically “melt” the garlic. The taste is there but you will not bite into it!! When using a grater watch your nails and fingers!!

Your recipes are absolutely wonderful. This is my favorite ‘go to’ for my family and friends. Butters is SO CUTE. Thank you!

Butters is soooooooooo adorable. I am an ‘Auntie’ to a corgi. She is adorable too. I have a couple of little dogs too. The burrito bowl is perfect for a person like me who lives alone. The cream is very similar what I am using down which is my new favorite salad dressing and has been for a few months.

i use greek yogurt instead of sour cream. i also use more lettuce and instead of rice, i smash up a handful of tortilla chips. i also shred some sharp cheddar on top of the black beans while they’re hot. & don’t forget some tapatio Yum!

I made these last night and they were great and super easy. That chipotle cream sauce has the perfect amount of heat to it. I love spicy food, and I’ve made the mistake of overdoing it on those canned peppers in adobo sauce (I didn’t think food could get too spicy for me but I was wrong), so I was super careful just adding a little bit at a time, but in the end it was perfect!

Looks so healthy and delicious! I’m going to have to keep an eye out for that chipotle paste. Much easier than opening up a whole can just for a couple peppers.

I’ve made this recipe several times (adding diced grilled chicken), and our 13-year old son absolutely destroys this meal. Don’t get me wrong; I’m so glad he enjoys the food. Unfortunately, his appetite doesn’t leave many, if any, leftovers for my lunch the next day. All in all it’s not a bad problem to have. Thanks for the great recipe.

Burrito bowls are a favorite at our house! I would probably use brown rice to make it a little healthier. I love your recipe for the chipotle dressing. I usually just use sour cream and salsa but that sounds a lot better!

Oh my god Chungah. My entire family absolutely RAVED about this dish. Like, no lie, they totally loved it. SO GOOD. The only changes that I made were that I added red onion, shredded cheddar, and chipotle deli turkey, and I served the salsa with the romaine lettuce. I also didn’t have any sour cream or chipotle pepper on hand so I just mixed some low-fat mayo into some low-fat ranch and mixed in garlic and onion powder, cumin, black pepper, paprika, and A BUNCH of cayenne pepper; and everyone loved it, even my mother who HATES spicy food. All in all, super solid dish and I will definitely be making this again.

I tried these bowls and they turned out soo good! They are super easy to make! Only cooking required is the rice! I ate these twice this week. For the rice I sauteed in oil with a garlic clove and some onion for a few minutes and added a chicken bouillon cube when when I added the water to finish off. Rice turns out really good this way. Just add your salsa when it cooled.

Made this recipe tonight and it is a-m-a-z-i-n-g! It’s so quick and easy to put together, which makes it perfect for a week night. We will definitely be making this over and over again… My husband is practically licking the bowl!

I made this for dinner today. It was sooo good! I didn’t make the chipotle sauce but I mixed in some sour cream and lime juice with the vegetable mix. The rice made it even better, and we even dipped corn chips in it. It’s so versatile and delicious!

I just finished eating a bowl full of this-YUM! I used quinoa so I didn’t have to wait for my brown rice to cook, and it was so tasty! Your chipotle cream is AMAZING! Even my toddler asked for more! Definitely a new regular in our meal rotation!

I like spice so I added an extra tablespoon of chipotle peppers and an extra garlic clove, which made it just right for me and my father without being too much for my spice-averse mother. Just made this salad for my family tonight. A huge hit with everyone! Couldn’t find the chipotle paste any where, so I used Taco Bell’s Bold and Creamy Chipotle sauce. Loved the spice it added. Also added some fajita flavored chicken strips. Will definitely make this again!

I was pleasantly surprised when I scrolled through your photos and saw the adorable stamped spoon! I sell stamped silver plate in my Etsy shop! One can never have too many stamped spoons!

Wow, just wow! The chipotle sauce really makes this dish. At first blush, I thought this sounded like just another taco salad without the shell, but was I ever wrong! So glad I tried it anyway. I added shredded chicken and proportionately more lettuce and avocado (lots more avocado). I’m pleasantly full and content and the pic of Butters has inspired me to snuggle up with my pups on the couch on an unseasonably cool and rainy day. What could be better?

I’ve never seen chipotle paste here so used the chipotles in adobo. For those who don’t realize, what’s left from the can freezes beautifully and will last for about 6 months. Those cute little one-cup plastic containers with the screw-on lids are perfect for this.

FAB-U-LOUS! Got 4 thumbs up, even from the picky small kiddo. These will be terrific for summer dinner.

I made this last night (with some lightly seared top sirloin chunks) and when my husband tried it, he looked at me with huge eyes and said “This tastes exactly like Chipotle.” He loved it and had three helpings (when he truly loves something, he tends to lose a little self control.) I made this for dinner Thursday with vegan Chipotle cashew cream and cranberry beans from Rancho Gordo. It was so delicious it is haunting me. The smokiness of the chipotle really makes it a special dish. My teenage grandchildren gobbled it up and asked for leftovers the next day. (I had wisely made a double batch.)

Yes, you can chop them up as needed along with the juices.

Skipped the avocado (not a huge fan), added in grilled chicken breast sprinkled with cayenne. Delicious!

I love burritos. It’s tasty, and you can even put your favorite inridients.

Made this tonight and it was soooo good. Did a couple of changes though… we didn’t include the Roma tomatoes (just had the salsa) and for a healthier option, we used lowfat plain Greek Yogurt instead of sour cream, also used chipotle sauce instead of chipotle paste and added shredded chicken. Needless to say, it was a delicious recipe! Can’t wait to make again!

I love this idea but I hate beans. Is there any sort of substitution someone has tried that keeps the delicious feel of the dish, but gets rid of the beans?

I love burrito bowls. I add sauteed shrimp to mine, with a little cilantro and squeezed lime…yum! For the rice, I get the Trader Joes Brown Rice in the frozen section..it’s awesome and so convenient/easy to make!!
