Easy Burrito Bowls
Skip Chipotle and try these burrito bowls right at home. It’s easier, healthier and 10000x tastier!
I finally made a burrito bowl at home. Well, I guess it’s more of a burrito plate. But still. Burrito bowl, burrito plate – I’m in love.
With fresh veggies and just 10 min prep with a creamy chipotle drizzle, what’s not to love?
Plus, this is completely customizable to add in your favorite proteins. Or if you’re like me, you can keep it vegetarian. There’s plenty of goodies to go around here!
And if you really want to go that extra step and make these even healthier, you can use quinoa in place of the rice.
You’ll get that extra kick of protein, and be full for hours on end! So who still wants Chipotle for dinner tonight?

These look great and I love that spoon!! And I love Butters standing there! Skylar’s standing next to me while I’m reading this and she thought Butters was just tooooo cute! 🙂 And love that this is vegetarian on top of it!
Awwww – thanks! Butters has been glued to me during my shoots, bouncing up and down like a pogo stick. But this time, he actually caught himself on the table!
Mmm….I love burrito bowls! Yours looks delicious. And butters is so cute! Love that face!
We do not have chipotle here in Australia, so do you have any ideas about what can be used instead?
I recommend using a different dressing that would pair well with the flavors present in this dish such as a lime vinaigrette.
What kind of salsa did you use ?
1/4 tsp. Smoked paprika and 3/4 tsp. chili powder, and a chopped roasted jalapeno, seeded.
Thanks so much Barbara Hots for the recipe on the Chipolte Paste. If I can’t find the paste locally its nice to know i can turn to your recipe.
If you get liquid smoke in Oz put a couple of dashes in it. I don’t get canned chipotles here in Colombia either.
I made these this evening and ended up just squeezing half a lime into the sour cream and adding some minced cilantro and salt, delicious! Also, I live alone, and even though I made the full recipe, I portioned it all out into separate containers for lunches and quick dinners for the week! LOVE your website!
Gotta love easy meals like this! Yum!
We have a version of this recipe that is a STAPLE that we call “DIY chipotle”. I totally want to try your version too! You know, for “research” 🙂 PS. Can I come over at pet sit? Butters is too darn cute!
I just love your website! Your recipes are wonderfully easy, the photos are beautiful, and who couldn’t love updates on Butters’ adventures?
Oh that face! It kills me!
This looks so light and fresh. A perfect lunch! Where do you find chipotle paste? I use canned chipotle all the time but never heard of the paste.
I like to use Olo’s chipotle paste: http://www.olofoods.com/index.html. They come in a cute toothpaste like packaging and last for weeks!
Beautiful bowl of colors! Thank you for sharing!
MMm fantastic! USually when I have burritos for dinner, I have one and then I made a little burrito salad afterwards, compromise second helping 😛 And it’s got all the best bits, yum!
I like refried beans and ground beef with taco seasoning in my burritos so I would add those and take out the black beans and the rice…can’t eat rice with my lapband. Sounds good though!
I just went to Chipotle the other night because I was craving an easy dinner. These bowls are so gorgeous!
I am planning on making a Mexican style salad (w/ most of the same ingredients) one day this week. However, I wasn’t sure of what dressing I was going to use. Something with lime… I like the dressing you posted. I think I will make it. 🙂
Looks great but Butters steals the show…So cute. Any idea what to substitute for the sour cream to make it vegan. Would love to serve this when we have another couple over as one is vegetarian-ish (enjoys meat as a treat but not every day) but the other is vegan. As I am trying to look into other “alternative styles” not sure what I can or if I can swap out/exchange the sour cream……I will be enjoying this without the vegan at some point….teehee
For a vegan option, I recommend using a fresh vinaigrette, such as a lime or lemon vinaigrette.
Thank you……So simple….
This looks delicious. Question… What is “pressed garlic”?
It’s another way to cut garlic. This is easily done with a garlic press. That way you don’t end up with huge chunks of raw garlic in your dish!
I love garlic in cooked food, but for this I will use a microplane or fine grater to basically “melt” the garlic. The taste is there but you will not bite into it!! When using a grater watch your nails and fingers!!
Your recipes are absolutely wonderful. This is my favorite ‘go to’ for my family and friends. Butters is SO CUTE. Thank you!
My husband is a sucker for the burrito bowls at Chipotle but those are expensive…I think i’ll give these ones a try! PS can I steal your doggy?
Your dog is super cute! 🙂
These look delicious, I love chipotle and I always get a burrito bowl, I don’t know why I never thought of making these at home – it’s so easy!
We don’t even have Chipotle here in Australia! I definitely will be making these burrito bowls, love how quick, easy and tasty they are.. a great weeknight meal!
I’m going to try this with quinoa tonight. That chipotle cream sauce looks to die for! Oh, and Butter is just the cutest! It definitely looks like he approves.
This looks so delicious!! And butters is so so adorable!!
This has my name written all over it! And I love the cute little beggar too!
Butters is soooooooooo adorable. I am an ‘Auntie’ to a corgi. She is adorable too. I have a couple of little dogs too. The burrito bowl is perfect for a person like me who lives alone. The cream is very similar what I am using down which is my new favorite salad dressing and has been for a few months.
i use greek yogurt instead of sour cream. i also use more lettuce and instead of rice, i smash up a handful of tortilla chips. i also shred some sharp cheddar on top of the black beans while they’re hot. & don’t forget some tapatio Yum!
Yes, Tapatio is a must! We use that on everything!
I made these last night and they were great and super easy. That chipotle cream sauce has the perfect amount of heat to it. I love spicy food, and I’ve made the mistake of overdoing it on those canned peppers in adobo sauce (I didn’t think food could get too spicy for me but I was wrong), so I was super careful just adding a little bit at a time, but in the end it was perfect!
Looks so healthy and delicious! I’m going to have to keep an eye out for that chipotle paste. Much easier than opening up a whole can just for a couple peppers.
Hi, I’m Jackie 🙂 Those look so good! I love Chipotle veggie burrito bowls, and I have always wanted to make them at home. I will be trying this for sure. Thank you!
I’ve made this recipe several times (adding diced grilled chicken), and our 13-year old son absolutely destroys this meal. Don’t get me wrong; I’m so glad he enjoys the food. Unfortunately, his appetite doesn’t leave many, if any, leftovers for my lunch the next day. All in all it’s not a bad problem to have. Thanks for the great recipe.
Burrito bowls are a favorite at our house! I would probably use brown rice to make it a little healthier. I love your recipe for the chipotle dressing. I usually just use sour cream and salsa but that sounds a lot better!
Oh my god Chungah. My entire family absolutely RAVED about this dish. Like, no lie, they totally loved it. SO GOOD. The only changes that I made were that I added red onion, shredded cheddar, and chipotle deli turkey, and I served the salsa with the romaine lettuce. I also didn’t have any sour cream or chipotle pepper on hand so I just mixed some low-fat mayo into some low-fat ranch and mixed in garlic and onion powder, cumin, black pepper, paprika, and A BUNCH of cayenne pepper; and everyone loved it, even my mother who HATES spicy food. All in all, super solid dish and I will definitely be making this again.
Your corgi is adorable!!
This. Looks. Fabulous. I’m going to try with quinoa rather than rice. LOVE the dog.
Great website! Recipe looks great…where did you get the eat clean fork? Love it!
Thank you! I purchased the fork from Milk & Honey.
Where do you find Chipotle Paste? I looked for 20 minutes in Harris Teeter last night and can’t find anything!
Chipotle Paste is readily available on amazon.
I made this for lunch today it was AWESOME.
This looks delicious! Do you know the nutrition facts for this recipe?
Missy, I try my best to provide nutritional information for my recipes. However, if they are not available, it is best that you use online resources at your discretion (you can gooogle “nutritional calculator”) to obtain such information.
You dont by any chance record the nutritional i fo for your recipes do you? I am starting weigh watchers …. and this looks sooooo tempting!
I try my very best to provide nutritional information for my recipes. However, if they are not available, it is best that you use free online resources at your discretion (you can gooogle “nutritional calculator”) to obtain such information.
I tried these bowls and they turned out soo good! They are super easy to make! Only cooking required is the rice! I ate these twice this week. For the rice I sauteed in oil with a garlic clove and some onion for a few minutes and added a chicken bouillon cube when when I added the water to finish off. Rice turns out really good this way. Just add your salsa when it cooled.
Yes, you will be cooking it in the second step:
In a large saucepan of 1 1 /2 cups water, cook rice according to package instructions; let cool and stir in salsa; set aside.
Made this recipe tonight and it is a-m-a-z-i-n-g! It’s so quick and easy to put together, which makes it perfect for a week night. We will definitely be making this over and over again… My husband is practically licking the bowl!
I’ve got like 20 recipes open in tabs right now so I’m mostly picture scrolling to see if it looks like something I’d eat. Decided I’m making this one just because there’s a Corgi.
Also because the man creature will eat anything resembling a burrito. But never mind that. Corgi.
I was wondering if you could use chipotle sauce instead of the paste?
Yes, of course! But you may have to add a little more chipotle sauce than the listed amount for the paste.
I made this for dinner today. It was sooo good! I didn’t make the chipotle sauce but I mixed in some sour cream and lime juice with the vegetable mix. The rice made it even better, and we even dipped corn chips in it. It’s so versatile and delicious!
Thanks for the recipe – I’m trying it this week! Yum!
P.X. LOVE Butters! I have two Corgis that never leave my side when I’m in the kitchen!
This looks really good and I’m a huge fan of chipotle but I am currently trying to lose weight so I am on a diet. Do you know roughly how many calories are in your healthy burrito bowls?
Nutritional information is provided only for select and new recipes at this time. However, if it is not available for a specific recipe, it is best that you use free online resources at your discretion (you can gooogle “nutritional calculator”) to obtain such information.
Did you use white or brown rice? I know I can use either but your bowl looks delicious 🙂
I used white but you can use either or.
I just finished eating a bowl full of this-YUM! I used quinoa so I didn’t have to wait for my brown rice to cook, and it was so tasty! Your chipotle cream is AMAZING! Even my toddler asked for more! Definitely a new regular in our meal rotation!
Burrito bowls are my go to lunch many times during the week. This recipe sounds incredible!
made this tonight, so good! I like spice so I added an extra tablespoon of chipotle peppers and an extra garlic clove, which made it just right for me and my father without being too much for my spice-averse mother. I also put out extra sour cream and salsa on the table, which my dad added, but neither my mom or I felt it needed. I’m making a small collection of easy, healthy recipes that my somewhat disabled mother can make once I leave and this is definitely going on the short list, thank you!
This recipe was great and right on time. My husband wanted a meatless dish for dinner and this was perfect. I could hear his fork scraping the bottom of the second bowl he has eaten.
I love your blog! I’ve made so many of your recipes and they have all been awesome!! I love anything with chipotle. Never heard of the paste. I take the whole can and puree in my
Vitamix and save it in a jar. I love adding a touch of chipotle to most foods!
We just had this for dinner.
Easy, yummy, what more can we ask for?
A keeper for sure!
This turned out so good. i ended up using the chipotle peppers in adobo sauce! i was worried that it wouldn’t turn out so good but it was awesome! i love some chipotle sauce too!! Your blog is my go to site for recipes! i make at least 2 recipes from your blog a week! thank you soo much for keeping this up!
Just bought all of these ingredients for tonights dinner! I’m always looking for something easy to throw together on Mondays (my crazy day), and this sounds awesome! I plan on throwing in some left over grilled chicken too! Yum!
How long does the chipotle cream sauce last once made?
It should keep for at least 1-2 days in the fridge.
So delicious and easy!
Yum!! this is perfect, yummy and so easy + quick! thinking about melting some cheese on top and adding sour cream!
Just made this salad for my family tonight. A huge hit with everyone! Couldn’t find the chipotle paste any where, so I used Taco Bell’s Bold and Creamy Chipotle sauce. Loved the spice it added. Also added some fajita flavored chicken strips. Will definitely make this again!
I loved this recipe! I actually have loved all of your recipes that I have made so far, but this one… oh! This one is so good and it is healthy and filling. I made some chicken for my husband to add to it and he loved it too. This is going to be a frequent meal in our house. Thanks for sharing! I wish you lots of success! 🙂
I have 2 corgi’s too!! Same colors as yours! LOL
This recipe is fantastic! So much flavor!
I was pleasantly surprised when I scrolled through your photos and saw the adorable stamped spoon! I sell stamped silver plate in my Etsy shop! One can never have too many stamped spoons!
Wow, just wow! The chipotle sauce really makes this dish. At first blush, I thought this sounded like just another taco salad without the shell, but was I ever wrong! So glad I tried it anyway. I added shredded chicken and proportionately more lettuce and avocado (lots more avocado). I’m pleasantly full and content and the pic of Butters has inspired me to snuggle up with my pups on the couch on an unseasonably cool and rainy day. What could be better?
I’ve never seen chipotle paste here so used the chipotles in adobo. For those who don’t realize, what’s left from the can freezes beautifully and will last for about 6 months. Those cute little one-cup plastic containers with the screw-on lids are perfect for this.
FAB-U-LOUS! Got 4 thumbs up, even from the picky small kiddo. These will be terrific for summer dinner.
I just made this. I replaced the rice with quinoa because it is what I had on hand. ABSOLUTELY DELICIOUS. I used all organic ingredients and it is perfect to use when i’m prepping lunches. Thank you!
Looks delish! And ever better with a corgi next to it! 🙂
Food & Corgi’s, yes please!
I made this for the first time last week, and it was DELICIOUS. So much tastier than Chipotle – and cheaper! Totally addicted to this recipe and all of your other Mexican-Inspired dishes. Thank you!
I made this last night (with some lightly seared top sirloin chunks) and when my husband tried it, he looked at me with huge eyes and said “This tastes exactly like Chipotle.” He loved it and had three helpings (when he truly loves something, he tends to lose a little self control.) Awesome recipe! Immediate family favorite, thank you so much!
(I had a Corgi too! She was my best friend for 13 years. I still miss her. Corgis are the best!)
I made this for dinner last night and it was so delicious! So little work for such a great looking dinner. Thanks for the recipe.
We loved this! It was so delicious and filling! None of us really liked the sauce though. So i mixed it with homemade ranch and it was awesome!
This was amazing. I forgot to buy chili peppers in adobe sauce for the cream sauce, so I just added more cilantro in it. This was so great, we will be making this more often!
Easy and so good! Didn’t find the chipotle peppers so used what I had on hand: sriracha mayo. Thank you for sharing your great recipe!!
oh yum! that looks so delicious. and your photography is beautiful as well. 🙂
I made this for dinner Thursday with vegan Chipotle cashew cream and cranberry beans from Rancho Gordo. It was so delicious it is haunting me. The smokiness of the chipotle really makes it a special dish. My teenage grandchildren gobbled it up and asked for leftovers the next day. (I had wisely made a double batch.)
What brand and type of store salsa would you recommend for this recipe?
That’s really based on personal preference and the types of brands that your grocery store carries.
This may be a stupid question, but how does it work if you are using the chipotle peppers in place of the paste? Do you chop them up as finely as possible or use the juice from the can? Thanks!
Yes, you can chop them up as needed along with the juices.
Skipped the avocado (not a huge fan), added in grilled chicken breast sprinkled with cayenne. Delicious!
I love burritos. It’s tasty, and you can even put your favorite inridients.
Made this tonight and it was soooo good. Did a couple of changes though… we didn’t include the Roma tomatoes (just had the salsa) and for a healthier option, we used lowfat plain Greek Yogurt instead of sour cream, also used chipotle sauce instead of chipotle paste and added shredded chicken. Needless to say, it was a delicious recipe! Can’t wait to make again!
Thank you for posting your superb blog about healthy cooking. I have just started to learn how to cook. I have spent my entire life in fashion in New York. I am very familiar with photography and the perfect image that represents the product. You have accomplished everything in your blog. I am a huge fan of your work. Every recipe I have tried is better than the next. I am extremely confident in my professional work but cooking has always been so hard for me. Your recipes have given me so much confidence in the kitchen. I actually enjoy cooking with your recipes. In a city where everyone orders takeout I would rather cook with your recipes. I am actually loosing weight and feel great eating healthy food that tastes extraordinary!
OMG. This is so delicious. I put in 2 tablespoons of chipotle paste to make it a little spicier. It makes for a great work lunch 🙂
so so good! i’m trying to both learn to cook and lose weight so this was perfect for me! made enough to do meal prep for the week.
I’ve made these delicious bowl/plates many times; they’re so delicious! Perfect for dinner then work lunches the next day. Thanks so much for yet another fantastic meal!
I absolutely love your blog. You’re so creative! Yummy burrito bowls btw.
I love this idea but I hate beans. Is there any sort of substitution someone has tried that keeps the delicious feel of the dish, but gets rid of the beans?
WOW. That was great. Even though I improvised, I still made a burrito bowel that was, as the website says, damn delicious!
I love burrito bowls. I add sauteed shrimp to mine, with a little cilantro and squeezed lime…yum! For the rice, I get the Trader Joes Brown Rice in the frozen section..it’s awesome and so convenient/easy to make!!
This dish is like, yummazing! Gotta add this this to my, ” to make list”.
