Copycat Starbucks Chicken and Hummus Bistro Box

Meal prep for the week ahead. Filled with hummus, chicken strips, cucumber, tomatoes and wheat pita.

I don’t know about you guys but I’m kind of a pathological snacker.

And it’s not cute.

Maybe it’s because I work from home.

But sometimes I just can’t stop eating.

It’s not because I’m hungry.

I do it simply out of boredom.

But these little bistro boxes have been saving my butt.

From the hummus, chicken strips, cucumber, tomatoes and wheat pita, these boxes keep me entertained long enough so I don’t eat an entire box of Puffins cereal.

Are the ingredients listed all supposed to be split between 4 boxes? That means 1 tablespoon of hummus per box – a tiny amount. 2 oz of raw chicken would cook down to less than that weight. And 1/8th of a cup of cherry tomatoes would be maybe 3.

Except for the pita bread, the list of ingredients seems more reasonable as split between 2 boxes. Maybe I am confused and didn’t quite understand.

The ingredients listed are for 4 servings.

Dearest Chungah,
You have changed my cooking life forever and I just wanted to tell you how grateful I am. I have made many of your recipes and not one of them was ever a disapointment. The fact that many of them are one dish or one pan wonders is part of what makes my cooking life so much better. Not only that, but my large adultish family absolutely loves, loves, loves the flavors! Guests actually ask me for the recipes and I just turn them on to your website. Seriously, I am grateful and I love your cooking talent. I wish you well and hope that your business thrives beyond your wildest dreams. In today’s busy world, you are a goldmine of help, happiness, and some of the best food I have ever eaten.

Sincerely,
Anita Domashovetz

Is your hummus homemade in these? It looks a lot smoother than my homemade hummus usually turns out. Maybe it’s just lighting…Anyway, thanks for all the great meal prep ideas!
