Chicken Parmesan Grilled Cheese

Chicken breasts breaded/fried, smothered with tomato sauce and covered with mozzarella – all neatly in a cheesy sandwich!!

Someone needs to take away my waffle maker.

Because this chicken parmesan is taken to the next level.

Chicken Parmesan Grilled Cheese

Yield: 8 servings

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Chicken breasts breaded/fried, smothered with tomato sauce and covered with mozzarella – all neatly in a cheesy sandwich!!

Ingredients:

  • 8 slices whole wheat bread
  • 1 cup tomato sauce
  • 8 ounces fresh mozzarella cheese, sliced

For the chicken parmesan

  • 1 cup vegetable oil
  • 3/4 cup Italian style breadcrumbs
  • 1/4 cup freshly grated Parmesan
  • 2 boneless, skinless chicken breasts, cut crosswise in half
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten

Directions:

  1. Preheat a waffle iron to medium-high heat. Lightly oil the top and bottom of the waffle iron or coat with nonstick spray.
  2. Heat vegetable oil in a large skillet over medium high heat.
  3. In a large bowl, combine breadcrumbs and Parmesan; set aside.
  4. Working one at a time, dredge chicken in flour, dip into eggs, then dredge in breadcrumbs mixture, pressing to coat.
  5. Add chicken to the skillet and cook until evenly golden and crispy, about 3-4 minutes. Transfer to a paper towel-lined plate.
  6. Working in batches, place bread slices into the waffle iron. Top with chicken, tomato sauce, mozzarella and remaining bread slices. Close gently and cook until golden brown and crisp, about 3-4 minutes.
  7. Serve immediately.

Looks so delicious! Do you put butter or olive oil or anything on the side of the bread that comes into contact with the waffle iron? I’m wondering if that would be needed for browning?

Nonstick spray should do the trick!

love the use of the waffle iron for mashing all these flavors together, also nice touch using whole wheat bread here, that much less guilt involved and really really looks like you won’t be able to taste the difference!, thanks again for a lovely recipe
