Blueberry Breakfast Quinoa

Start your day off right with this protein-packed quinoa breakfast bowl with a touch of tart sweetness from fresh blueberries and a drizzle of honey!

I’ve become a bit obsessed with quinoa – I’m so obsessed that I actually counted 5 bags of Bob’s Red Mill quinoa in my pantry. Plus a bag of TJ’s red quinoa. I think I might have a Costco-stash of quinoa somewhere around the house too.

Yeah, like I said. I’m obsessed.

Jason won’t actually touch quinoa with a 10-ft pole so all this quinoa is actually just for me.

So in an effort to use some of it up, I decided to make a simple breakfast quinoa. It’s more like a quinoa-type-cereal, except it’s packed with protein, fresh blueberries , drizzle of honey for a touch of sweetness, and sliced almonds for that added crunch. It’s the perfect way to start off your morning, or even fulfill your hungry cravings during the midnight hour!

Blueberry Breakfast Quinoa

Yield: 4 servings

Prep Time: 5 minutes

Total Time: 5 minutes

Start your day off right with this protein-packed breakfast bowl!

Ingredients:

  • 2 cups 2% milk
  • 1/2 teaspoon ground cinnamon
  • 1 vanilla bean, seeded
  • 2 cups cooked quinoa
  • 1 cup blueberries
  • 1/4 cup sliced almonds
  • 1 tablespoon honey

Directions:

  1. In a large glass measuring cup, whisk together milk, cinnamon and vanilla bean seeds.
  2. Scoop the quinoa evenly into serving bowls.
  3. Serve immediately with milk mixture, topped with blueberries, almonds and a drizzle of honey.

Great minds think alike! Anthropologie? I was kind of annoyed that I had to pay over $10 for a single bowl though. And then it chipped immediately when I got home! Oh well, at least it photographs well!

I enjoyed your site so much I signed up to receive your recipes. I don’t like eating a lot of processed foods and your site has very unique, fresh recipes. I have some quinoa in the fridge and some blueberries in the freezer. I’m going to be eating this Saturday morning. Btw, take the bowl back. Anthropologie has a liberal return policy. $10 is $10. :p

I am obsessed with quinoa as well and have bags of this stuff in my pantry! Since my husband won’t eat it also, I love the idea of relinquishing some of my stash for breakfast! Great idea! Can i substitute vanilla bean for the extract and if so, how much would you recommend? I don’t usually stock up on vanilla beans. Thanks!

I would start with a 1/4 teaspoon and add to taste accordingly.

So you eat it cold? Have you tried it hot like oatmeal? I just read a recipe that cooks it in the slow-cooker overnight with almond milk. I haven’t tried quinoa as cereal, but I’ve cooked it with broth and store it in the fridge. Then I throw a tablespoon or two into my lunch salad. Thanks for the recipe, I can’t wait to try it.

I added some shredded coconut and used raw goats milk. I also skipped on the vanilla cause I didn’t have any. This is 10 weight watchers points for any wanting to know, very worth it.

Just had breakfast. Had left over quinoa that was made with onions and mushrooms and other spices. I put some in a pan with olive oil and tried browning like a pancake. Didn’t work great but was able to brown the stuff. Got some hot sauce out and it was absolutely great. My wife and I are trying to be creative for the use of this most healthy products. Found this product in my reading of THE DANIEL PLAN by Rick Warren. The whole book is great and feel more positive about not only losing weight but eating healthier and getting my head and heart right.

If you eat this cold would you combine the milk mixture and quinoa before putting it in the refrigerator or add the milk mixture to the quinoa when you are ready to eat it. Thanks 🙂

I suggest adding the milk mixture to the quinoa when ready to serve to avoid any kind of sogginess from the quinoa.

Thanks for this! Just tried it tonight and it’s awesome! I was thisclose to throwing my quinoa out after it didn’t taste so great. A great replacement for my usual sugar filled oatmeal packets.
For the person counting calories…you should probably cut down to 1/2 cup of quinoa and use nonfat almond milk to cut numbers a bit.

I’ve never tried Quinoa before. But do you have to cook the quinoa before eating it, or do you eat it raw?

Marita, as indicated in the recipe, you will need “2 cups cooked quinoa”.

I have been making quinoa and steel cut oatmeal together with flaxseed, unsweetened almond milk plus the honey and blueberries. Very good!

ChungAh, I discovered your site via Pinterest (fantastic Mexican Quinoa recipe- gracias). I am a huge fan of quinoa, always have some and love it sweetened with fruit for breakfast (maple syrup with bananas and pecans, dried cherries and pistachios or diced apples, walnuts and cinnamon are my favorite, always with almond milk. Not so crucial when you are sweetening the quinoa, but more with savory, may want to mention the step of rinsing the grain to remove the bitter element prior to cooking as it can be off putting (Bob’s Mills is pre rinsed, but Costco isn’t, nor is bulk buy from a bin). I love your site. It’s my new inspiration. You are quite gifted. Thanks for sharing.

Thank you for the kind words, Gina! As for the rinsing of the quinoa, I always direct my readers to cook the quinoa according to package instructions, which always states to rinse the quinoa thoroughly prior to using. If they follow those directions, they should be in good hands!

Love quinoa and love it for breakfast. It is a great alternative to oatmeal in the morning….this is a great reminder to try this for my toddler, who loves oatmeal! Quinoa offers such a balance of carbs and protein, it’s a great way to start your day!

I normally cook the quinoa in chicken broth. What did you cook it in for the breakfast recipe? Or could you use milk to simmer it in?

Yes, that should work just fine.

Do you use cooked hot quinoa? Kind of like grits or oatmeal?

I find that this is best with room temperature or even cold quinoa, but please try what works best for you and your preferences.

Your recipes look great; however, I am disappointed the amount of salt, sugar, fats, carbs, etc. are not listed as I am going to be keeping a record every day of all of the above as it will keep me on track to know the exact amount of the right nutrients, etc. to be healthy.

I tried this and it was amazing! I didn’t have vanilla or normal milk so I just used cinnamon and almond milk. I served it with raspberries, blueberries, and strawberries. The family loved it. Definitely a keeper!

Prepare quinoa usually 2/1 ratio to water.
When done with little to no water add maple syrup (the pure good stuff) to taste. Boil more if necessary. Add blueberrys so that you have one blueberry per bite. You are good are to go…Simple and GOOD!!

Made the stuffed pepper recipe last night and had quinoa left over that hadn’t been mixed with the other ingredients, so I decided to try this for breakfast this morning. Not sold on it yet. I’m used to thicker oatmeal, so I found this to be soupy. I’ll give this another shot, but next time with a little less milk.
