Apple Cranberry Pecan Salad

The best fall flavors come together in this light and refreshing spinach salad tossed in the most amazing lemon vinaigrette!

With all the heavy holiday consumption from the sweet potato casserole to the homemade toffee, I really needed a salad. But not just any kind of salad. I wanted the perfect salad to keep me in the holiday mood without adding any extra pounds this Christmas season.

So that’s where this salad comes in. A fresh spinach salad tossed with crisp apple slices, sweet dried cranberries, juicy pomegranate seeds, and of course, pecan halves for that added crunch. Not to mention the most amazing lemon vinaigrette to give it that perfect hit of tanginess. Best of all, it has the perfect amount of red and green for the holidays!

Apple Cranberry Pecan Salad

Yield: 4 servings

Prep Time: 10 minutes

Total Time: 10 minutes

The best fall flavors come together in this light and refreshing spinach salad tossed in the most amazing lemon vinaigrette!

Ingredients:

  • 6 cups baby spinach
  • 1 Granny Smith apple, thinly sliced
  • 1/2 cup pecan halves
  • 1/3 cup pomegranate arils
  • 1/3 cup dried cranberries
  • 1/3 cup crumbled goat cheese

For the lemon vinaigrette

  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 lemon, juiced and zested
  • 1 tablespoon sugar
  • 1 tablespoon poppy seeds

Directions:

  1. To make the vinaigrette, whisk together olive oil, apple cider vinegar, lemon juice, lemon zest, sugar and poppy seeds in a small bowl; set aside.
  2. To assemble the salad, place spinach in a large bowl; top with apple, pecans, pomegranate arils, cranberries and goat cheese. Pour the dressing on top of the salad and gently toss to combine.
  3. Serve immediately.

This salad looks beautiful! I’m planing my Christmas menu and I think I may have to add this. I’m not a fan of goat cheese but this still looks amazing. Thank you!

Use Feta cheese instead.

I appreciate the suggestion but I actually don’t like feta, either. I’m usually not very picky but I’m just not into a lot of different cheeses. Thank you, though!

THIS SALAD IS A MUST….I made it for my sisters and mother. It was absolutely delish! Such a nice, interesting combination of flavors and textures. I did not have goat cheese so I used crumbled feta cheese and it worked very well. I also was unable to get pomegranate arils, but the dressing made everything come together. This is a type salad you can enjoy anytime of the year. NOTE: I tossed the salad with the dressing before serving as the recipe stated. However, when eating leftovers later that day, I noticed the taste was even better after the dressing had marinated the fresh spinach, etc. Make it…you won’t be sorry! Blessings to all.
